Cebreiro Cheese
Day 27, Paradela, Galicia
I’m taking the Rocky Brown (Sandy’s sister who has walked in Spain several times) cheese challenge and am eating as much Cebreiro Cheese with honey/quince paste as I can before I leave the region that made it famous. Here is the gold standard for the trip so far. Served as a dessert in a parfait glass, I ate it for lunch and added the fabulous balsamic vinegar that happened to be sitting on the table. Yeowzers!
